Goji Strawberry Vinaigrette Dressing
½ cup goji berries
¼ cup strawberries (fresh or frozen)
¼ cup apple cider vinegar
¼ cup balsamic vinegar
1 tsp amber agave nectar
1 tsp mustard seed
¼ cup olive oil
Soak the goji berries for 3-4 hours in fresh water. Drain and drink your goji infused water separately; it’s delicious! In a blender, mix everything but the olive oil, then stir in the oil slowly. Enjoy!
Guaca-Maca-Mole Recipe
3-4 avocados
2 roma tomatoes, diced
½ red onion, diced
¼ cup cilantro, chopped
3-4 cloves of garlic, chopped
Juice from 1 lemon
1-2 tbsp maca
1 tsp kalahari salt
Panca chili pepper powder, to taste
1 tbsp cacao nibs (optional)
Scoop out avocado and place in bowl. Chop tomato and onion, then add to bowl. Chop cilantro (with or without stems) and add to bowl with garlic, kalahari salt, maca, lemon juice, and panca chili pepper powder. Stir gently, and if you’re feeling adventurous, sprinkle cacao nibs on top!
Serve with fresh vegetables, flax crackers, or your choice of chips!
